Ingredients
  • 3 1/2 pound chicken
  • Goose fat
  • Salt and pepper
Directions
  • Preheat oven to 350 degrees.

  • Rub chicken with goose fat, salt and pepper.

  • Place chicken, breast side down on a rack in a roasting pan. Roast 30 minutes, turn over and roast for an additional 20 to 30 minutes, basting occasionally, or until the juices run clear.
