    Very tasty recipe! Even the husband liked it and he had never been a fan of beets before (i think he had only tried pickled. Very easy too!

    CAN'T BEAT IT! DELICIOUS AND DIFFERENT. ROASTING THE BEETS BRINGS OUT THIER SWEETNESS AND THE LEMON BRINGS THE SWEETNESS OUT IN A SAVORY WAY. JUST PERFECT!

    Thank you very much for the receipe!
    We bought some large beets at Boston's famous "Haymarket" our outdoor fruit and vegetable market and the generous seller gave us a bonus of extra beets we wanted something easy and tasty to do with and this receipe gave us just the idea.
    Roasting is a good way to go - concentrated the wonderful flavor and this method makes the beets easy to peel, again, thank you.
    The dressing is nice and classic - olive oil, lemon and fresh thyme are always a winning combination.
