Moist, delicious, fabulous! Sauce was very tasty, though really not even needed because the hens were so juicy. Will definitely make this dish again.

Really good! I made 4 and two of my children looked like little barbarians as they attacked their game hens. lol. My son didn't eat too much because he wasn't feeling well, so I took the carcasses and threw them in the crock pot over night and turned them into a delicious chicken noodle soup! This really helped offset the cost factor for me because I was able to turn it into two meals. I looked for the marsala at a couple different stores and couldn't find it, so I left it out. Served this with the crouton salad. So very yummy!

EXCELLENT! Yes, there is an obvious citrusy taste that not everyone might love, but it's an amazing, moist, succulent way to make a whole chicken (which I never successfully did before until this very recipe! I'm making it again next week because I can't get it out of my head from how amazingly delicious it tasted.

I've made game hen many ways, and this is definitely a very flavorful version - a keeper! I thought at first that the flavors wouldn't really come through or that they would be to my liking. I tend to like more hearty and savory elements with this meat. I was delighted with the dish. I did add a little heavy cream to the sauce…which made it look like bog water, so I don't recommend doing that, especially if you have company. Again, a definite keeper!! Thanks G!

Delicious and beautiful! Love the flavors and the colors of this wonderful dish. I've made this recipe three times so far - one of those times was at Thanksgiving in addition to the traditional turkey - just so company could try this. The third time, I made four of them and froze three (separately for an easy re-heat and eat dinner.
I did cook mine longer, and admit that I went overboard with the juices / broth for the gravy, which I loved. I reserved a container of the gravy for reheating too.

excellent! pan juices were delicious - served the hens w/ roasted potatoes and corn/brussel sprouts combo that i cooked in garlic and bacon - i will definitely use this recipe again!

Delicious!!! I didn't have cornish hens so I made it with one larger chicken, just adjusted the cook time, and followed the remainder of the recipe "as is". I was a little worried by all the liquids but it turned out perfectly and there was plenty of gravy to go around. I froze the extra pan juices for a night when I wanted slow roasted flavor but was short on time. I will definitely be making this recipe again... another Giada hit at my house.

Probably the worst recipe I've made off the Food Network website. I usually love Giada's recipes but this was not good. We threw it in the trash and reheated pizza.
