    I made this and took it to a couple of vegan friends of mine, and they loved it! They told me they "scarfed it down" and that they wanted the recipe. Even their non-vegan relatives loved it. I have made it a couple of times since then, because it's so good. In fact, I'm preparing it for a potluck tonight.

    I like adding extra corn, using all the kernels from two big ears of corn (and a little extra vinegar for the extra volume of veggies.

    This recipe should be tagged "vegan", so it could be found more easily by people looking for vegan recipes.

    This is really, really good. I think I could eat this stuff every day. Would be great on top of a green salad, too.

    The only change I made was I used a good quality balsamic vinegar in place of the red wine......just because I thought it would better suit my tastes.......and I didn't have freah basil so I rehydrated a little dried basil and added a little fresh minced flat-leaf parsley.

    I probably added a little more olive oil and vinegar and garlic than the recipe called for..just did it to my tastes. I love it!!!!

    Next time, I think I might try adding some black beans (in place of the corn. A little feta cheese would be great sprinkled over top for some added color and texture. A winner in my book!!

    Great way to eat edamame! I was scared to try this but I love edamame and also love roasting veggies so had to try it. Easy side dish!

    SO, SO DELICIOUS, healthy and easy! I was skeptical about the flavor of this dish considering that it uses so few ingredients but it tasted AMAZING! I roasted half of the tomatoes in the oven with the edamame & corn to enrich the taste then used the remainder at the end to freshen it up & give the dish a bit of acid. Worked out great. I will definitely make this again!!

    I was only going to give this four stars because I didn't initially think it was that flavorful. But my wife, and my kids (3 and 6 LOVED it. They all had seconds. So I bowed to their expertise!

    I'd like to make this a regular part of our menu (once or twice a month but am thinking it might get boring. Anyone have ideas on what to add for variety? Bacon seemed an obvious choice, but I'd like to try and keep it meatless.

    SO TASTY! What a fresh tasting yummy salad, even the young kids loved it. I did sub balsamic vinegar and a bit more garlic because I like more garlic. Next time I will add some goat cheese or feta just to change it up. Definitely make ahead of time and let marinate for a couple of hours. Wonderful and so healthy!

    Used frozen edamame - after I roasted it I realized I needed to shuckk the beans out of the pods. LOL Ended up roasting them again because all the flavor was on the pods. :(

    The flavor is great, tho! Served with a bit of crumbled feta and some torn up chicken lunch meat. Back for seconds I think! LOL
