I'm a big Alton Brown fan.... and being a vegetarian, I always have been eyes open for his recipes that I can have as well, since I know I won't be disappointed! This is probably my favorite of all his recipes. Delicious! but in a good way.... like you don't expect it to be that good. Very healthy and yumm!!

I did made this recipe as a side dish for dinner tonight. I used the same recipe but did a stir-fry instead of roasting it (I can't imagine using the oven during a hot and humid summer day. Came out delicious! I will be making it again; thanks Alton!

Following his pattern of providing different and amazing items...this one is no exception. As others have mentioned . it's easy to make and oh so delicious! I didn't/wouldn't change a thing except perhaps doubling the recipe just to make sure there are leftovers as I am sure this would be great the next day too!

I had something similar to this in a restaurant, so I was hoping to find a recipe on FN. I was thrilled to see this by Alton Brown. He's proven himself yet again with this one. It was so wonderful and healthy! We just had it by itself (no recipe tweaking required, but next time I'm going to serve cedar plank scallops on top!

I'm not a health food nut, but this kind of salad I can really get behind.

This is my new favorite dish to eat. I'm new to edamame, having first used it in a South Beach version of Shepherd's Pie. But this recipe has everything I love in it...edamame, tomatoes, corn, basil and the touch of red wine vinegar brings it all together! Thanks, Alton. Another great dish!

I love roasted vegies and I love edamame, so this was a no brainer to try. I loved it! It was flavorful, light tasting, and very healthy. I could easily eat this several times a week and not get tired of it. My next dinner party will have this on the menu. Good job Alton Brown.

I keep this salad in my fridge all the time now! It is the perfect healthy snack or quick meal. It is so easy to make, very affordable, and very flavorful! It is one of my new favorite dishes, and turns out great every time I make it.
