    I was looking for a way to make Lima beans interesting for my toddler and came across this recipe, and I'm glad I did because she loves it! However, I switched out the Cayenne Pepper with Paprika though, and it was still DELICIOUS! I was never a big fan of Lima beans, but after my mother and I tasted these, I ended up making a ton more for us to munch on too. This I think is great as a side or a snack!

    This was a delicious side. I substituted lemon juice because it is all I had and it still turned out excellent. It is a nice variation on the usual plain old lima bean, yet it is still simple. I highly recommend it.

    I read the reviews and they were very helpfull. For mine I added more salt and also montreal steak seasoning! They turned out great! My children 3 and 1 years old loved them as well. Thank You.

    The first batch we thought were a little bland. To the second, I added more cayenne to the mix and topped with chopped proscuitto on the roasting pan. Before serving, I squeezed another lime over the beans and tossed with a little more salt. Great! The other reviews are right, better the next day.

    I changed the recipe a bit. I used canned lima beans, drained and dried with a paper towel. I also added lime zest as well as lime juice to the recipe. I have been snacking on these for the past few weeks!! They have replaced chips and all that bad junk food. I refrigerate the leftover portion and heat them up the next day. I love the really crispy ones. Be sure to not overcook...they can burn quite easily.

    Sooooo good and so easy! Good the first night you make them, an awesome snack the next day- I double the recipe so I can snack on them later. I love this recipe!
