never roasted a turkey. Much less brined one. This was the best turkey ever!! My mom even said it was better than hers and shes been doing it for only about... 15 years. i urge u make this turkey now! it is not hard and it iss awsome! so much for beginners!

FABULOUS Ree!! The turkey came out moist with a perfect crispy skin!! The orange in the turkey was a great compliment to the bit of orange juice I add to my dressing and cranberry ice!

This was the first time I ever roasted a Thanksgiving turkey and it was amazing! I cooked for a few friends and my kids, who loved the turkey. Yum! Thank you!

I have never brined a turkey before and when I watched this episode and had a 20# fresh turkey sitting in the frig, I decided to use my family as the guinea pigs. I figured if it came out good I would make it again for Christmas when my mother is visiting. It came out great!! I didn't have a brining bag or enough room in my refrigerator so after the brine was ready. I put my turkey in a giant plastic food-grade tub that I have and put it in a cooler packed in ice. 20 hours later, rinsed and in the oven, I used the cook unstuffed and remove, raise heat, stuff and finish baking. Best turkey I've ever made. Juicy & flavorful! Thanks for the delicious recipe that will be the only way I make turkey from now on. (Except that I ordered a brining bag for Christmas - will save me a little money on ice!

Winner, Winner Turkey Dinner..........
First turkey I've made in years, we normally go to my families each year and they serve dry over cooked turkey. I left it in the brine for 16 hrs, rested the turkey on celery and carrots in the roasting pan and stuffed the cavity with fresh thyme, onions and celery. After the 3 & 1/2 hours I removed 90 percent of the juices for the gravy and it only took 45 minutes more to reach temperature and I loosely covered and let rest for another 40 minutes. My husband raved, raved, raved about it. He took his fork and showed me how the meat and juices just pulled away from the drum stick. Thank you Ree for making this a very enjoyable and edible Thanksgiving.
I think I'll make the turkey for my sisters next year!!!!!!!!!!!!!

This was fabulous!!! We decided to try this on Thanksgiving - a little scary trying a new recipe on a holiday, but the reviews were so good we took a chance. And are we glad we did! the turkey was very moist, but the best part was the gravy. Following an earlier reviewer suggestion, we didn't use the butter and orange zest, but butter and sage and thyme. We rubbed it on for the last half hour. We also stuffed the cavity with an orange, an apple, an onion and some fresh herbs. Everyone loved the gravy - it was not salty at all - but it had a very slight sweetness; just really full of flavor! Thanks for such a great recipe!!!
