I loved this recipe and so did my whole family. I didn't have apple juice so I used applesauce for the marinade which turned out fine. Also, midway through cooking the chicken I threw a splash of red wine into the pan which added some vibrant color and sweet taste.
Served it with an Italian style salad and the meal was to die for!

While the idea of an apple cider brine is great (we did one for our turkey at Thanksgiving and it turned out amazing, you couldn't taste the apple flavor at ALL because of the cooking method- frying.
This came out awful. Might have something to do with my inexperience at frying, but the apple taste certainly did not come through at all.

This was delicious. I've never brined with apple cider vinegar or apple cider. It gave the chicken a wonderful flavor.
I'm going to try it with pork next.
