Even my children went back for seconds. You will end up with way more vinaigrette than you need, but you can use that for a marinade for another day. Added some leftover cubed ham to satisfy the carnivore husband, but it would have been great without the addition. Definitely a keeper. Plan ahead for this though, the peppers take at least half an hour to roast enough to remove the skins.

I am absolutely ADDICTED to this salad! Since I'm the only person in my house that likes black eyed peas, it's the only way I can get them. Irvine's take on black eyed peas makes for a wonderful dish!
