Chicken Fried Rice

  • 3 large eggs
  • Kosher salt and freshly ground black pepper
  • Vegetable oil, for frying
  • 4 boneless, skinless chicken breast halves, cut into thin strips
  • 1 teaspoon sesame oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, finely minced
  • 4 cups cold, cooked rice
  • 6 green (spring) onions, thinly sliced, plus more for garnish, optional
  • 2 tablespoons soy sauce

Beat eggs with a whisk in a small bowl and season with salt and pepper, to taste. Heat very little oil in a medium frying pan over medium heat and make an omelette using half the beaten eggs. Turn out onto a plate to cool (do not fold omelette). Repeat process with remaining beaten eggs. Place 1 omelette on top of the other, fold and coarsely chop. Set aside.

In a medium bowl, toss chicken strips with the sesame oil and season with salt and pepper, to taste. Heat 3 tablespoons vegetable oil over high heat in large frying pan or wok and stir-fry the prepared chicken strips until lightly golden, about 2 to 3 minutes. Add the onion and garlic and stir-fry for 1 to 2 minutes or until onion has softened. Add 2 tablespoons more vegetable oil and when hot, stir in the cooked rice and green onions, tossing and mixing thoroughly until very hot. Sprinkle with soy sauce and mix evenly. Remove from heat and stir in chopped cooked egg. If desired, garnish with additional sliced green onions.

    It was good, I added asian seasoning, fresh ginger, garlic and scallions. It was quite easy and tasty, my entire family had seconds! This is a keeper.
    It was quite good. We used chopped sweet onions and added mushrooms, celery, and some carrots. Four of us ate it all. Next time I'll add peas too. Had a great time cooking it with my 17yr old daughter. She found the recipe.
    This recipe has no flavor and way too much oil! Very disappointed!
    I loved this recipe! It was easy and tasted as good as our favorite chinese restaurants recipe! I added 1 cup of peas and carrots as my own variation, and I didn't have sesame oil, so I used some sesame seeds that I cooked with the chicken, and it came out so good everyone had seconds!     Very easy to make and even without modifications, this recipe is as good as any Chinese restaurant fried rice.
    This recipe made me look like an Asian gourmet cook exemplar. In fact, I didn't change a thing, and it was SO good that my daughter claimed it could stand right up there against any of her favorite Chinese restaurants. I think that the sesame oil is the secret in putting this dish above the competition. I marinated the chicken strips for about an hour before frying it. A perfect, perfect dish which surprised even me, who preferred pork fried rice before this. Thank you, Robert Irvine. We love your shows.
    Hi. What did you marinade your chicken in? 
    I made a couple of modifications to this recipe. If i had cooked as written it would have gotten one star. I used Kathy Cary recipe to marinade my 2 chicken breast.I only used 2 cups of rice. Anyone making this recipe need to use her recipe for the chicken awesome. I did as some of the previous reviewers did by adding veggies, more sesame oil and soy sauce. I also added ginger and garlic. The dish i prepared is a 5 star. Marinade a must try Asian chicken salad.
    This was an awesome recipe! I added green beans mushroom and carrots also general tso sause the archer farms brand instead of the sesame oil and it was a lot tastier.

I live in a small town so variety in food is limited. It is great to know I can cook this type of food at home!!!
    This recipe was very bland. I added more sesame oil and more soy sauce than it called for. Wont be making again. Pretty disappointed.
    I'm a native New Yorker and have had authentic chinese food in manhattans' china town. This recipe was ok,but FAR from authentic. It certainly lacked in authentic chinese fried rice flavor. Oh well, back to the drawing board!! Will look for an authentic chinese fried rice on one of the "AUTHENTIC" chinese food sites!!!!!
    One word.....Amazing! The chicken was flavorful and great all by itself. Easy to make. Tasted like good homemade chinese food, not like takeout or anything. My go to fried rice recipe. Trade in shrimp for something tasty as well.

    This is a good recipe. I added bean sprouts, and peas. For additional flavor, I mixed in extra sesame oil to the rice at the end. The sesame oil is what gives the rice that special taste, and just putting it on the pre-cooked chicken wasn't enough. My family actually craves this dish!
    I had been craving Chinese Food and had some leftover Rice from the night I found this recipe and tried it. I did change out the chicken breast for some already pre-cooked chicken breast (the kind you get in the frozen food section I had some on hand and used it instead. I simply added it to the pan where the recipe called for the chicken and carried on with the rest. It came out great, and makes a quick dinner or Sunday lunch for the whole family.
    Good fried rice. So easy! I just scrambled the eggs right in the wok. Not sure why the recipe recomends using a separate skillet. Just more dishes to wash!

    Wonderfully delicious! I have never been able to make such authentic fried rice such as this one! Loved it. I added green peas to it for extra veggies.... Yummy!

    WOW!!! I've been "trying" to make any type of fried rice for the past 8 years to no avail. I have finally made chicken fried rice that my family totally enjoys and it tastes like the real thing!!!!! Awesome, I will be making this again.

    This was a very good recipe, but do not underestimate how big your pan needs to be. Also I agree with the others and I will be adding peas and carrots to it in the future.

    It tasted very much like the actually chinese fried rice we get in the restaurant. I loved it. My sone like it and if he liked it had to be good. Hat's off Robert.

    We loved it! The flavors were just right. It tasted like take-out, only fresher and better. I added some frozen peas and carrots and cut the rice back to only 3 cups, which was plenty for us. The only problem I had was that I didn't have frying pans big enough for all of the ingredients. As a result, I had to get more pans dirty. Of course, our wok is pretty small, but still. I wish I would have just halved the whole recipe. Other than that, it's great!
    the one thing of to thing's i dun was i put bell pepper's in and candy some caret's for the side it was kicking chicken
    I made this dish to go with my chicken stir-fry for supper and very easy to do just fallow and you finish with a good rice !!!! The only thing i did not do is add 2 tablespoons of oil before adding the cook rice to the skillet and was just ok .Very happy to add a new rice dish to my cook book because my husband and 4 year old son just love rice!!! Thanks.
