Ingredients
  • 6 cups shredded cabbage
  • 1 cup shredded carrot
  • 1 cup mayonnaise
  • 1/4 cup white wine vinegar
  • 1 teaspoon celery seed
  • 1/4 cup sugar
  • Salt and pepper
Directions

In a large bowl, combine cabbage and carrots. In a smaller bowl, make dressing by combining mayonnaise, vinegar, celery seed, sugar, salt and pepper. Toss dressing into cabbage mixture and let chill. Serve in a family style bowl.

This coleslaw recipe is full of zingy flavor. After reading other reviews, I started out with half the amounts of vinegar and sugar, but the result was bland. So, I used the full recipe amounts and could not be more pleased with the taste. Very good recipe! I used chopped up celery leaves because I didn't have celery seed. I also used bagged slaw because I had that on hand. I increased the amount of everything slightly because it added up to more than 6 cups. I let it sit in the fridge for an hour and a half of so. I didn't have white wine vinegar so mixed rice and red wine together. I also tossed in some caraway seed, and chopped onion. I had to slap hubby's hand to keep him from picking at it while I was putting it together. This was sooooo delicious! I could have drank the dressing! Word to the wise, the slaw shrinks after you add the dressing, so what you think is a huge amount is just a big serving. Never have liked cole slaw, even if I loved the individual ingredients. Husband decided to make this recipe. We had no celery seed so we didn't use it. Even so, I now can't get enough of this stuff. We make the full amount of dressing but only use half as we enjoy a crisper, less dressed slaw. We store the rest for another batch at a later date. This coleslaw tasted great but there was just too much dressing and it was a little soggy. I prefer bright, crisp coleslaw so next time I'll use half the dressing. I added a lot more cabbage, about 2 cups and it was still a bit wet for me. I tasted it as I put the sugar in and like many other comments, it could use less sugar. We made a few slight changes and additions. We added 1/2 of purple onion, 3 scallions, 1/4 of a purple cabbage and red wine vinegar cause it's all we had. Easy to make and you can use precut cole slaw mix in the bag. We also add pineapple chunks (well-drained and cut into smaller pieces) when adding the dressing - more a southern approach to it. Regarding the sugar, we do use the whole amount or otherwise the vinegar will be too strong for this salad. Let me start by saying I'm extremely particular when it comes to cole slaw and I rarely find any that I like. The taste and texture has to be just right. This recipe is perfect.
