This macaroni and cheese was delicious. For a large group, I would use 1/2 the onions. Some might find it too oniony. The recipe says, "serves 4". This would serve 8, easily. I used whipping cream and it worked well. The crushed cheese cracker crumb topping is a great idea.

This was SO good! I had a bunch of leftover ham, and wanted a good mac and cheese recipe (that used ingredients I had on hand! and this fit the bill... the combination of this recipe with ham added in (and a bunch of spices - red pepper flakes, garlic powder, cayenne pepper, etc. - my husband and I like spice!, this was perfect satisfying homemade mac and cheese! (I especially loved the chicken stock! This is definitely my new stand-by recipe!

With a couple substitutions, I was able to make this dish with thing I already had in my kitchen, i.e. Milk for cream, onion powder, chicken stock. SUPER EASY, and the flavor lends itself to modifications, I might try some bacon next time, or a different type of cheese to spice things up. Love love cheesy golden love!!

I've tried other 7 cheese mac n cheese recipes and stovetop recipe thinking the more cheeses the better but they always came out too complex tasting. I just wanted a classic mac n cheese. This turned out awesome, even my husband admited he was not a mac n cheese buff but this recipe made him change his mind. Usually when I do mac n cheese it comes out gritty tasting but this was very creamy- I think because of the heavy cream instead of milk. Used double the chicken broth and a bit more cream to thin it out.

I was scared by the comments on Paula's and Alton's recipes. This was my first mac&cheese attempt. I made a TON of mistakes, and it still came out GREAT!
Cut the amounts unless you're feeding a football team! Used onion powder instead of fresh and added a little hot sauce.
