    Longer cook time for the high altitude....but this is a recipe with attitude! Used skinless chicken and worked great...also subsituted a regular tomato for the grape tomatoes. WOW!

    This entree was easy to prepare and cook. The chicken is moist and the flavors of the relish explode in your mouth.

    Was great! I cooked the onions for a bit longer than it called for, and chopped the potatoes and onions in a blender to speed up the time, which made it super easy.

    This recipe is delicious! I subbed sweet potatoes for regular potatoes and used more sweet potatoes, strawberries, and grape tomatoes than it called for. This required a little more cooking time for the relish part of the recipe.
