Just attempted this recipe from Chef Irvine. I chose it because (I am a fan obviously it was not extremely complex and it sounded delicious... Pork, stuffing, apples, & cranberries how can you go wrong? This dish totally delivered! It had all the comforts of an early thanksgiving dinner. Even my wife who does not care for cranberries had two helpings of the stuffing.
I will say that the measurements for the stuffing seemed excessive because I yielded a whole roasting pan worth of stuffing, not that I'm complaining because I can't stop eating the stuff, but it may be a tad much if you are not looking for leftovers. All in all this dish is an A+ for me and my family. I'll definitely be making it again!

This recipe was pretty low-intensity as far as difficulty was concerned and delivers excellent flavors all around. It's a delicious twist on the same old stuffing. The pork loin maybe needed a little more than 35 minutes -- I went for about 45 and it came out perfect.
Everyone loved it -- my girlfriend, co-workers, parents -- and I think it will make an excellent addition to anyone's Thanksgiving Day spread.
