    This is truly a wonderful pot roast recipes. I use an eye of the round, which usually comes out a bit dry - but not in this recipe. I like to add parsnips to the carrots. It is rich and delicious and most wonderful gravy over mashed potatoes. Elegant!

    My mom made this the other night for a family and friends get together. The only thing she did differently was swap port wine for the sherry. Everyone raved about it, it was fantastic! It was so good I asked for the recipe and now am reviewing it!
