This is my 4 year old son's favorite soup. He asks for it constantly. Super easy and super yummy.

I AM A BEGINNER COOK - and used 3 extra large vegetable boulion cubes, 4 potatoes, 2 extra large leeks, and i put this very delicate pasta shells imported from italy, and about a tablespoon of whole pepporcorns, DID NOT BLEND THE SOUP, and it came out so beautifully, very professional, my boyfriend LOVES it, i felt like a master chef! the recipe is a big pot so use one, mine was filled to the top, i dont understand how people can screw this one up! Thanks for posting this recipe, you made my day and looks like you made my day tomorrow since there are leftovers, but barely any! : : :

This is really good soup. I've been wanting to make potato soup for years and finally did. Leeks are fairly expensive at the store I went to, so I didn't put as many in, but the soup still has a lot of flavor.

Excellent and rather easy to make...I did how ever add 3 table spoons of chicken bullion and two fresh bay leaves to the soup after blending it...this woke up the flavor more !
I will definitely add this to my go to favorites!

Made this for Christmas dinner with the in-laws and they went nuts for it. I know it's supposed to be thick, but personally I don't like soups that are as thick as paste so I added more chicken stock to adjust the consistency to my liking. I also garnished with crispy chopped bacon and eased off the salt a bit because of this. Highly recommend the bacon garnish.

I made this soup on the fly. I had everything but fresh thyme but had dried. I used my immersion blender & made it smooth because I wanted every bit of flavor in the base. I always keep bags of frozen sliced leeks from Trader Joes in my freezer just in case & I'm glad I did because store was out of fresh, as well as fresh thyme. I diced all the veggies, used homemade chicken stock, maybe next time I would use vegetable stock in steak. Something was definitely missing. I thought it was on the bland side. I added salt & pepper in small amounts but something was still missing. I added garlic powder & that made it better. I added more thyme, then I added small amounts of fine herbs & Herbs de Provence. That did it!! Very flavorful, delicious. 4 stars because of the blandness.... Pays to keep small amounts of dried herbs you buy in bulk in your spice drawer. Added some Parmesan Romano croutons on top with fresh crusty bread. YummmmmmO!

I didn't blend it, left chunky but i added about a cup more chicken broth for the left over turkey, along with substituting with leftover mashed potatoes (in place of the cubed potatoes at the beginning. Was delicious

This was very good. I added French bacon and not so many leeks. I would chop the leeks first. Also did not blend it all leaving some junks. Very good!
