Ingredients
- 1/4 cup olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 cups white rice
- 1 quart chicken stock
- 1 teaspoon poultry seasoning
Directions
Heat olive oil in a medium saucepan and saute onion and garlic until the onion begins to turn translucent. Add rice and stir to coat with oil, onions and garlic, and let rice "toast" lightly. Stir in chicken stock and poultry seasoning and bring to a boil. Then reduce heat and simmer covered until all liquid is absorbed, about 20 minutes. Remove from heat and flake rice.

This was much better than those horrible boxed varieties and I have had them all as I was intimidated to try to make a homemade pilaf. This recipe was so easy and delicious! Only suggestion is to lessen the poultry seasoning to a scant teaspoon and add the smallest pinch of salt, but that is just my taste preference. Very glad to have found this recipe and will be adding it into the rotation!

I served this with a Baja Citrus marinaded chicken. This mild rice balances any spiced, flavorful meat. I also liked that it was not as salty as the boxed, packaged variety, and with ingredients I already had in the pantry. I substituted the medium onion for a few tablespoons of leftover minced onion, celery and carrots from another Food Network recipe. Overall easy and tasty!

I loved how simple this recipe was. I added a few of my own ingredients. A few sprigs of thyme a couple tablespoons of chopped fresh parsley and one medium tomato diced. Right before I served it I squeezed fresh lemon juice on it. It went so well with fish.
