My family does not like cooked greens, but they do like sweet potatoes. The dominant flavor of this side dish is the sweet potatoes, with the onions and spinach offering a nice undercurrent of flavor. Most eaters went for seconds. I was happy because its hard to beat the nutrition that a dish of sweet potatoes and spinach supplies.

My college aged daughter needed something to bring to a work holiday luncheon. I found this recipe and it looked like it would compliment the menu just fine.
The only suggestion I would make is BE SURE that you have the spinach cleaned and dried and ready to go when the sweet potatoes come out of the oven. I didn't, so we had to keep putting the serving dish into the microwave to heat up the sweet potato mixture enough to wilt the spinach!! It ended up that the spinach wasn't quite wilted by the time my daughter got the dish to work (through 40 degree weather but she said that it still came out wonderful and was really delicious.
I also didn't cut the potatoes into quarters - who can stuff a quarter of a sweet potato in their mouth?? I did an approximate 1" dice and also used extra virgin olive oil instead of canola oil, and used sweet Vidalia onions because I didn't have red onions on hand.
The baking time was right on with the 1" dice, and I only used 1 large Vidalia onion because I couldn't imagine using 2 LARGE onions. I thought the onion would overpower the rest of the ingredients.
Can not wait to make this side dish at home for our holiday dinner.

I had two sweet potatoes in my fridge and wanted a recipe that was simple and yummy. OMG this is so incredibly good. I didn't do the spinache as I was only looking for the potatoes! Some modifications I did the second time I made it was to do a light coating of oil on the potatoes vs. using the exact measurements. I did the same with the butter and honey. This is soooooooooooo good! Its very simple tomake too. I generally am not a fan of sweet potatoes or yams.. but I can see making this my holiday vesion of sweet potatoes for sure!

Great meal. It is very healthy, and it took no time at all to prepare. I used 5 tsp olive oil instead of canola oil to mix with one sweet potato to make a meal for one (probably could have used 1 less tsp oil. I also added chopped bell peppers with the onions for a little extra flavor. Will definitely make this meal again!

I modified the recipe a bit, because it seemed strange to toss quartered sweet potatoes in a salad. (quartered potatoes, seem a bit too large
so I made made about 1 inch cubes, and the cooking times given in the recipe were still way too short.
