Appetizers are usually the bane of my existence when planning a dinner party -- most recipes are disproportionately time consuming to prepare, way too filling, and generally distract from the main course. But this is a TERRIFIC appetizer!!! Simple to make, not too filling, and can be prepared in advance -- of course, keep refrigerated. No need to scoop out the cucumbers -- just pipe onto cucumber slices, fill cherry tomatoes, use decorative piping on crackers, or even hard boiled eggs, with or without yolks. Garnish with a dab of red or black caviar, or alternate -- one red, one black -- it makes a beautiful platter. EXCELLENT -- Bravo!!!

I've tried this recipe and it was very good. Instead of using cucumbers I hollowed out cherry tomatoes and piped this into them. Very tasty

I love this recipe. I didn't use the melon baller to scoop out the middle, I just made the design on top and it worked out fine. My husband loved them too!

I made this recipe for a friend's graduation reception. It made quite a bit but became watery as it sat. If you make it up and serve it immediately - not a problem but you can't let it sit. It is very tasty.

The mousse ends up very salty, but that works well with the bland cucumber. However, it might work better if you salt the cucumber and try to draw out some of the water. I piped the mousse onto rounds, instead of into boats (got more that way, and the mouse slid off the cucumber as it gave up water. A bit of a problem.
But next time, I'll whip that problem, and these will be very good indeed.
