I've tried about half a dozen curry recipes so far, and this was by far the best. I used regular mushrooms instead of the shiitakes, and I used homemade red curry paste that I had leftover from Emeril's "Thai Shrimp Curry" recipe.
This was so good that I wanted to lick my plate clean (I maintained my dignity though. Not particularly spicy, so you'll have to kick it up a few notches if you want heat.

This was easy to make and tasty. The flavors were kind of tame, but pretty good nonetheless. Next time I'll probably add a bit more of the curry paste.

This was great!! I halved the recipe but did not half the amount of red curry paste and it was spicy but perfect. Also added green beans, red peppers and carrots sliced paper thin and used chicken broth instead of water. Reminded me of the curry dish I ordered at Thai Thai in Volcano Village, Hawaii. Thanks!!

This dish is very simple to make. If you truly want it spicy you must double the red curry paste and I added 1 real good squeeze of Sriracha.This is a dish that you could add whatever veggies you like and it would be great. I am not a coconut fan but you cannot taste it at all. I served it with rice noodles and everyone enjoyed it. I suggest you double the sauce. Thanks Robert!

Very good!, used with Ina's Basmati rice recipe and was a great pairing. Used 4 tsp red curry and still could have been a tad spicier. Would definitely make again, my fiance loves Thai food and thought this tasted pretty authentic w/ the rice.

I would use chicken stock instead of water next time. A tad more curry and lemon grass instead of the lime. Also I added pea pods, yellow pepper and onion slices for more texture.

This was super delicious! Tastes just like my favorite dish at my local Thai place! I added a teaspoon of sugar as I like mine slighter sweeter than it came out; I also like it spicier and will have to kick it up next time but the flavor was amazing. I added rice noodles at the end to complete it instead of rice. I'll be making it for a long time to come.

Delicious! my roomie can't wait for me to make it again. He doesn't care for mushrooms so I substituted bell peppers instead and, because we like it spicy,I added some dried thai chili. As for the rice... used the delicious lemon ginger basamati recipe from Ming's Quest.

Just made this and absolutely loved it! I like it spicy, so I added about a 1/4 teaspoon of sriracha for an extra kick. Super easy, and I can't wait to make it again with some more veggies in the sauce.
