Very easy to make. My husband, who is a reluctant guinea pig when it comes to Indian food, LOVED this! I didn't have coconut milk on hand so substituted 1/3 c half and half and 1/3 c chicken stock. It worked ok in a pinch but I definitely missed the coconut flavor. I also added 1 med yellow onion, sliced in when cooking the chicken, and some frozen peas at the end with the sauce. Substituted 2 teaspoon red curry powder for curry paste and it worked fine.

I added double the amount of curry paste and my husband said that this was his favourite meal

This recipe is easy to make and super delicious! I doubled the sauce and put about twice as much red curry paste in, minus the water. I served it over Jasmine rice and it was a hit! I will definitely make this again in the future!

This was my first time making Thai. My family loves Thai food so I am trying to learn to make good Thai food. This recipe was OK but it is still lacking something, because it doesn't taste like the Thai food I have had in Thai restaurants. It was just OK to my family. I will try again.

I have been trying to recreate a curry chicken I love from a restaurant in Brooklyn , NY. This sauce is pretty close. I put in red peppers and a few tomatoes and added sake instead of water. Next time i will let the sauce boil down a bit so it is thicker (tomatoes added some liquid and maybe add bamboo shoots. And maybe make it a little spicier.

I love most of the DI's recipes, but the curries never taste like the curries I had when I lived in Asia.

I thought it was a huge disservice that Foodnetwork took Robert off. I understand the reason, but NO ONE CAN REPLACE HIM !! Especially that other person who didn't fare well at all and always looked FRAZZLED like he couldn't handle STRESS !! Well, I just wanted to say that I'm thrilled to have you back and now I have something great to watch. The stars are for your recipes that are terrific. Keep up the good work....
