    There was a lot more stuffing than could fit into the peppers. I even "stuffed" them. HAHA.. Get it? Ok, lame puns aside, this recipe was really good. I loved it, and will totally be making this again.

    I liked this recipe. It took a bit longer to make but it was worth it. I cooked the peppers in a muffin pan. I cooked them for 25 minutes. I needed 12 peppers to fill all this stuffing. It is yummy. I will make it again.

    Very good. The peppers took longer to cook than 15 mins. I cooked them in a muffin tin and put a bit of water in each cup and covered with foil. I added hot sauce to the rice/veggie mixture, topped with shaved parmesean and a dollup of the tomato paste!

    Good but not great. We loved that it had so many vegetables and the colors were so beautiful. But, it lacked flavor. I didn't have tarragon so I used Italian seasoning. I used tomato sauce on the bottom and a mix of Italian cheeses rather than just parmesan. I also used a mix of wild, brown and red rice. I'd love to make this recipe again but with more flavor.

    DELICIOUS!! I used whole wheat rice instead of wild rice, and i forgone with the mushrooms and cheese, but it was still flavourful. This will be one of my potluck dish in the future :D

    I thought the stuffed peppers were quite tasty. I used yellow and red peppers (which require a longer cooking time. I substituted the wild rice for Zateran's Dirty Rice and it was great. Will try this again and again.

    simple and delicious! this is a great recipe - easy to make, tasty, and i happened to have all of the ingredients on hand. you could probably even substitute other ingredients if you don't have them available (ex: pilaf or quinoa for the wild rice.
