I have not tried this dish yet but will. To the person that said it's under gluten free. It says in the recipe that if you wanted to make it a gluten free dish, use Arborio rice instead of the Barley. Read carefully before attacking.

A lot of work,for an uninspired dish.
I found it exremely bland, and boring. the pesto never melted on the top, so it just looked like green blobs on the top of the casarole. The flavours didn't taste like they blended well
I won't be making this dish again.

This recipe is under gluten free recipes, it has barley in it so it has gluten. Hope you don't make it under the impression it's gluten free. and then get sick. Yuck!

I made a vegan version & I can't wait to try the regular vegetarian version. I'm sure it's even more delicious with the real cheeses. The toasted pesto was so yummy on the top. Love it!

I thought this was delicious. My one year old loved it too! I used barley in the recipe but cooked it differently than the recipe suggests. I put in three ladles, one at a time and stirred until absorbed. Than I poured in half of the balance and let it simmer, stirring occasionally, until absorbed. Than poured in the rest and did the same as just mentioned. It worked beautifully and I wasn't tied to the stove. I also substituted feta cheese for the goat cheese. Yummy!

Thanks FoodNetwork.com for having vegetarian friendly recipes. By the way, to the person who commented angrily that this is not a gluten free recipe and only gave the recipe one star - who said it was supposed to be gluten free? Vegetarian has nothing to do with whether or not something has gluten in it. It means that it does not have meat (or no animal products if it is vegan.

Although this sounds like a very tasty vegetarian recipe, and very healthy, it would not be an appropriate recipe for someone with Celiac Disease who needs to be gluten free. Gluten is found in barley, malt, wheat, rye and oats - except certified gluten free oats.
Thanks to the food network for providing a search category for gluten free foods.

I found the recipe very easy and tasteful. My 10-year-old even wolfed it down and she usually picks at the unusual. My husband was quite taken with the dish as we have recently had meatless meals thrust on us. We have a Polish exchange student and she gives up meat for all of Lent. The whole 40 days. The Food Network has come to my and mt family's rescue to find meals without meat but with taste!

First of all, be sure to get the Quick-cooking Barley like the kind from Quaker and you should be close to the recommended cooking time. I only used part of the veggie stock, it just didn't need the whole amount called for. Other than that, it was very tasty and very hearty and I ate it for a week and still had some left over! Be sure you have a lot of people to serve when you make it!
