    I used the recipe for the black eyed peas and had it with the spiral ham from Aaron McCargo (Big Daddy for our NY day meal. They were wonderful together. Instead of regular salt, I used smoked sea salt and it added a nice flavor. I also used frozen peas, instead of canned...just cooked them first according to package directions, then sauteed in a pan with the OO, etc.

    I'm rating this a 5 for the black eyed peas. I was already making burgers and needed a side dish. Growing up I never enjoyed black eyed peas much, but these were wonderful! My only change was that I twice deglazed the pan with a bit of chicken broth and that helped keep the beans moist and added a deeper level of flavor. Next time, I may mash the beans slightly and add the broth, along with the Parmesan and parsley. This was very yummy - I will definitely make it again.

    WOW! Someone actually invented a beef burger that tastes like PORK! And its DELICIOUS!!! I cooked my burgers in the bacon grease and they were great. They were so moist inside for such a thick burger.

    I've not eaten black eyed peas in years. I didn't grow up eating them and hadn't had them until I was maybe 26 years old- and they were smothered in ham and of course they were VERY good. I saw this show and later tried to find the recipe but never could- because it's 2nd billing to the burger. These peas came out REALLY good and I'll be making them often. The more slightly crisp they got the more we liked them.
