    I made the Apricot Pork for my husband and my twin 2 year olds. Everyone ate it up! I was surprised that my husband enjoyed it because he is not a fruit eater.

    I cooked the sauce in the bottom of the pan for a little bit longer to thicken it up and poured it over the pork medallions.

    I made this with turkey cutlets and it turned out awesome. The pork is good, but if you're on weight watchers, the turkey is less points!! GREAT RECIPE!!

    Add my name to those who loved this dish. I sliced my meat a little thicker - about 1", and it really took just 15 minutes. Served it with roasted broccoli. How I love to have a great dinner come together in just 15 minutes!

    I made this last night for dinner- what a great (healthy rendition on "sweet & Sour Pork". When I make it again I will include pinapple cubes and serve it with rice- my husband and I loved it!
