Ingredients

  • 6 cups arugula
  • 4 (4-ounce) cooked steaks, sliced
  • 1/3 cup thinly sliced red onion
  • 1 green bell pepper, seeded and thinly sliced
  • 1/4 cup fresh lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon honey mustard
  • 1 teaspoon finely grated lemon zest
  • Salt and ground black pepper
  • 1/2 cup shaved Parmesan (use a vegetable peeler to shave a block of cheese)

Directions

Arrange arugula on a serving platter. Top with steak slices, red onion and bell pepper.

Combine lemon juice, olive oil, honey mustard, and lemon zest. Season, to taste, with salt and black pepper. Toss with salad greens. Top with shaved Parmesan just before serving.

    Remove membrane and add a rub:
    If the steak has a membrane covering one (or both? side(s, remove with a sharp knife!
    Add a rub to the steak before cooking:
    1 tsp. fresh thyme (scrape with leaves off the stem and chop
    1/4 tsp. pepper
    1/8 tsp. salt
    Cut steak it into 4 oz. serving pieces so it can be cooked to the preferred doneness of the eaters. BBQ or panfry. 4 mins per side, less for rare.

    My hubby LOVES this recipe and requests it all the time. It was even the first meal he asked for after returning from his deployment to Iraq! It is so quick and easy to make and is always our go to weeknight meal.
