I gave this 4 stars instead of 5 because while the beef and gravy was awesome, the veggies were way too soft and lost their individual flavor. I will make this one again because my family loved it. Not a shred of meat left and I doubled the amount for 6 people. I will discard the veggies next time and make mashed potatoes instead because the gravy was to die for and the veggies give the gravy a lot of flavor. A keeper for sure.

Got 2 thumbs up from 2 relatively finicky eaters. When I get 2 thumbs up, I know it's good and it was. I had a Boneless Chuck Roast so I used that and it was tasty. Just like a few I'll make the vegies bigger. I had to cook it an hour less but flavor was still there.
Thanks...I too want to make Empanadas with leftovers, that would be wonderful!

Made this last night with a 3 pound pork roast and it was outstanding.The smell in the kitchen was wonderful and the sauce was delicious!I like the versatility of the recipe also...can use just about any veggies.I used parsnips, turnips, carrots, potatoes and onion but the sauce really makes the dish. My family loved it!!

This was really good. I wasn't too sure about the maple syrup but it gave the roast a nice flavor. I had forgotten it was in there when my husband & I ate it so the flavor was a nice surprice! It just added that little something. I never got to morph it into the other 2 recipes because it ended up as lunch!

This is one of my favorites when it is cold outside! I use turnips and red potatoes and cut the chili powder in half. Personally I could just eat all the veggies with the sauce and leave out the beef!

This turned out great. I used a venison roast and the traditional potatoes, carrots, and celery. I didn't brown the meat first, which I always hate messing with anyway, and it tasted great. The meat was very tender and the flavor of this dish is wonderful.

We're definitely making this again. My house smelled wonderful and the entire meal was full of flavor. Very, very moist (pull apart with your fork roast!
