    In addition to reducing the broth by 2 cups, I also added corn starch to thicken things up a bit but STILL found it pretty thin.

    This was also not the most flavorful soup. Perhaps more time to simmer and let the flavors interact would help, but as is this recipe didn't do too much for me.

    I just made the soup, its great and I got a good texture with 3 cups of mashed potatoes, 3.5 cups stock, and 2 cups water (to get rid of sodium. I blended with colby jack cheese (milder than cheddar, black pepper, Lawry's season salt, and dry mustard.

    The recipe tasted great in the end, but make sure to put a towel over the top of the blender to make sure none of the soup escapes. I had a potato mixture all over my kitchen.

    We love homemade soups and this one is almost at the top of the list of our favorites.I added a dash of garlic powder and Lawry's Seasoning Salt. Perfect. Thanks.

    Based on previous reviews, I used only 4 cups of chicken broth and increased mashed potatoes to 2 1/2 cups to get a thicker consistency. I served it with homemade parmesan croutons as a garnish. My husband and I thought the soup was very good. I will make this soup again, maybe trying the other add-ins as suggested by previous reviewers.

    This recipe was easy and fun to make. I used chicken stock instead of water/boullion and added fresh broccoli florets while cooking the potatoes and other veggies. This is a great meal to make during the week and this soup really sticks to your ribs...YUM

    I think this soup would be better with more mashed potatoes. It's just a little too thin for my taste. Definitely a fast meal if you have leftover mashed potatoes!

    This is a great start to a filling meal! We added extra potato chunks and/or black beans to give the soup some "chew". We make it all the time!

    My husband loovvveee it! I used left over mashed potato with saute bacon, onion, & garlic. Follow the recipe and after pure the soup with blender, i put it back in the pot and add sour cream. Yuumm-O!!

    Nice and easy and satisfying. I added a bit of plain yoghurt to the mashed potatoes to give it a little 'zing'.
