    This was an excellent and really easy enchilada recipe! Can also be made healthy by using low fat wheat tortillas.

    I prepared this for my grown children who love mexican food - left out onions and added steak grill seasoning to chicken - put some salsa on top of enchiladas also - They said it blew every other mexican restaurant dish away.
