    Very good! Most of the ingredients I had. I did add enchilada sauce and coated my tortillas with the sauce before filling them. I bought some vegetarian black bean refried beans for a side and added the left over sauce from the filling to it so no waste. This made the refried beans extra tasty. This was a hit with my husband. Must add that it was easy. Can't wait for the left overs.

    I mash the black beans and spread them on the corn tortilla and I use shredded chicken instead of cubed. Always use fresh ingredients when cooking tex mex. Fresh adds so much more flavor and texture. Watch the fluids, too much makes it a stew. Use different types of cheese to get that preferred taste and always watch the amount, less is more.

    I thought this dish was absolutely delicious! It was also very easy to make. I made a few changes - used enchilada sauce to line the baking tray and then topped the enchiladas with with some of the sauce as well. The very last topping was cheese. So good!

    Excellent recipe for enchiladas. I always use a little extra cilantro and salsa to keep the filling nice and moist. This is one of my husband's favorites!

    Great, quick recipe! Use extra salsa,(Newmans' Chunky recipe at least 1/2 to 3/4 cups and put a little cheese inside. Also use corn tortillas, the flavor is much better. Serve with a side of sour cream. Yum!
