I'm a 17 year old just beginning to cook, and this was a very easy and simple recipe for me. It came out great, you could really taste the cilantro and peppers, without them being too overwhelming. My family loved it!

After my wife went back to school I needed some quick and easy recipes to feed my two girls. Not only was this a very easy recipe, but my whole family loves it. I have found myself cooking this quite often now.

This was very easy and very yummy. I would make it again. I found that the chicken was still to large so I cut it up smaller. Shredding it probably would be even better. I also thing that additional seasoning would help. I found this to be fairly bland as is. Maybe taco sesoning mix or some personal spices (even just salt would help. Otherwise..... very good. I will make this again.

Made this one for unexpected company. Used a roasted garlic/cilantro salsa in the mix for deeper flavor, along with pretty well carmelized onions and garlic as well. Cut the chicken smaller and used smaller tortillas to stretch it to feed more bodies. Tip: if you use a specialty salse like I did, mix it in equal parts with ranch dressing to serve with a salad topped with finely shredded Mexican-blend cheese to accompany the enchiladas. A nice way to continue the flavors throughout the meal. And, it was plenty for us. my wife took the leftovers to work the next day. Her whole office was jealous!

...because after reading other reviewers' comments, I find too many that are NOT reviewing the recipe provided, they are reviewing the recipe as they have modified it. To me, if you have to modify so much, the original recipe is lacking. I find this to be the case with a lot of Robin's recipes -- basics are OK, but so often seem to be lacking something... she's supposed to be the recipe developer, not me, When there are plenty of other good recipes available (Tyler Florence, Emeril, etc., why re-invent?

Too dry. If you have to add so many more ingredients, how can it be a great recipe. I do like this show and Robin. She is very informative and is good at planning. Also, she does not shout or have a forced delivery like, for instance, cooking for real's what's her name.

This recipe is a great place to start, I added chipotle peppers, rice and cheese inside the tortillas and they came out great. It made 6 with extra ingredents and I can't wait to make it again!!!
