    Made these last night. Instead of chicken, I used leftover pork loin from the previous night. I added some fresh chopped tomatoes and a few pepper flakes for some heat. Served with a dollop of sour cream and a splash of salsa. My husband who says he does not like mexican all that much, gave this one a two thumbs up.

    These were excellent! I left out the hearts because I've never had them and was nervous! Everything else was wonderful! I would serve it with sour cream and lettuce and tomatoes next time too!

    Due to my budget I am forced to eat at home. I get tired easily of the same old, however don't always have the time or energy for complex recipes. All the flavors mix so well on this recipe. I sauted it all together first, and mmmmmm!!!

    My husband and I loved these. He grilled the chicken on the charcoal grill, which gave them a smoky flavor. We'll definitely make them again!

    I was looking to something different with quesadillas and found this recipe. This is so good and easy, there are so many variables to this recipe. I had some time so I caramelized the onions (yum and sauteed the mushrooms. I've made this the quick way and "I have some time way," either way, this is a great recipe!

    I made these for my son who cooks in a restaurant. He wanted to know what was for dinner. I told him Chicken and mixed vegetables quesadillas with artichokes, mushrooms (which he hates and roasted red peppers. He told me that's not how you make them. I told him try it, you might like it. Need I say more, he loved them. He had two already and told me he would probably have more a little later on. This is a keeper. Gail

    My husband and I loved these! I wouldn't change a thing about them. We love fresh veggies so didn't cook them ahead of time. The veggies seemed warmed through as I made sure they cooked for 3 minutes on each side. I think that's the key. I even used whole wheat tortillas and my 21 month old twins enjoyed as well. That's a good thing! :
