    I sauteed the mushrooms and onions first and made sure to drain the peppers and artichokes well to keep the quesadillas from getting soggy. I also added some cilantro to the mixture, which would also work well with the Thai salad from the show. Pepper jack cheese gives them a nice little bit of heat. Delicious!

    What a great easy recipe for a busy weeknight. This meal can be made in a flash and is great for leftover chicken (or buy a cooked chicken at the grocery store. And it's easily adjusted so parents can have a yummy meal and kids can leave out the things they won't eat (e.g. mushrooms, red peppers. I left out the artichokes and it was still very yummy.

    I used this recipe and varied from it just a little in that I used fresh bell peppers and roasted them myself with oil and I sauteed the onions and mushrooms in butter. But I used all the same ingredients and it was delicious!

    My husband and I both work long days so we look for recipes that we can make in a snap... we make these quesadillas on a regular basis. Using a rotisserie chicken, it's quick and easy to prepare.

    This is a great recipe if you have picky eaters because it's not at all difficult to make to order. I think the secret is in the artichoke hearts. Substituting a small amount of goat cheese for the jack is also really good!

    I made these a few weeks ago and they were wonderful. I did saute the mushrooms and onions first, a personal preference. So many variations you could do with this recipe, zucchini, tomatoes, different cheeses, spinach. Whatever you have. Use any leftover chicken you have.
