    Great way to dress up quesadillas, I don't think I will make them any other way. Husband is not a fan of mushrooms or artichokes, so I did caramelized onions and roasted red peppers, with roasted chicken breast from the store. Excellent!

    So quick and easy and quite tasty. I couldn't find tortillas big enough to fold so had to make a sandwich using small ones. If you do this, be sure to put cheese inside the bottom and top so the tortilla sticks to the middle. I learned this the hard way. I also had 2 skillets going at once to make more at a time. Perfect weeknight meal.

    I stir-fried all the vegetables first, then put together the quesadillas. Didn't take much longer and gave a better flavor than I think the raw veggies would. Fantastic meal with the soup!

    This was a great twist on your typical quesadillas and everyone loved them. We had leftover filling and saved it for wraps the next day. Very easy and great tasting.
