    The muffin recipe is what interested me because we love pablanos. What a great, easy addition to any meal!!

    I liked both dishes but probably won't combine the chicken and fennel with the corn muffins in the future. I used fresh peaches instead of canned because I didn't want the syrup. It was very good but looked bland. Needs some color. The corn muffins in pablano cups were a hit even though I didn't cook them long enough. I thought the muffin part could use some more flavor. I think I will add pepper jack cheese next time as suggested in another comment. I will definetly make these again.

    I didn't make the chicken breasts. I made the corn muffins in poblano cups. Wow, what a great side dish. They look great as well as tasting great. I used Jiffy Mix, as recommended, and a few changes due to what I had on hand--chopped fresh orange bell pepper, and pepper jack cheese, which I chopped pretty fine. The peppers turned out nicely roasted, the corn muffin mixture very moist and tasty. I also put one in a orange bell pepper half and it looks good, but haven't tried it yet. I think the spice of the poblano is perfect. When you buy pick out your poblano's be sure and try and pick ones that will form a "cup" when cut in two.

    This was definately Quick and easy but so so as far as the chicken dish goes. The corn muffins in poblano cups I thought were the most outstanding of the pair as they looked pretty and were tasty

    I only made the corn muffins in the poblano pepper cups from this recipe. They were very tasty, easy to perpare, and rendered a beautiful presentation! I will be making these again!

    I tried the recipe and I was a bit disappointed because the peach glaze never thickened up. I think it was because I used peaches in juice concentrate rather than in heavy syrup. The recipe doesn't provide enough detail to decide.

    Beyond that, the chicken had a nice peachy flavor. However, I could not find quinoa in any market and landed up substituing a couscous. It was good. I liked the additions to the corn muffins. They were very good. I didn't use the pobano peppers.

    The most interesting way to dress up chicken and fast way to do for those of us who dont cook very well. Its so simple even my youngest daughter could cook this recipe.
