Ingredients
- 2 cups frozen or canned corn, thawed and/or drained
- 4 ounces canned pimento, diced
- 1 (4-ounce) can diced green chiles
- 1 teaspoon ground cumin
- Salt and ground black pepper
- 1 tablespoon chopped parsley leaves
Directions
In a medium bowl, combine corn, pimento, green chiles, and cumin. Mix well and season to taste with salt and black pepper. Garnish with fresh parsley.

I was skeptical about the flavor pairing when I watched the episode, but I was very impressed with the ease of this salad and the new twist it brought to the flavor of the crab cake. I did leave out the parsley,however, and maybe that is what made the difference. Definitely worth a try!

this corn recipe was TERRIBLE!! Cold and bland with a very off flavor. i just think the combination was very, very bad. sorry, but so far i am not liking anything from this show.

The corn salad was good by itself but there is just no way it should be pared with crab cakes. I do enjoy the show but to really be truthful, no way should those two go together. You can't really taste the crab cakes the flavor gets over powered by the corn salad.
