Ingredients
- 1 English cucumber, thinly sliced crosswise into rounds
- 1 tablespoon cider vinegar
- 1 tablespoon chopped fresh dill
- Salt and pepper
Directions
In a medium bowl, toss together cucumber, vinegar and dill. Add salt and pepper, to taste.

I took a peeler, and peeled the cucumber into dozens of thin layers, stopping before I hit the seeds. I toped the layers on top of each other and sprinkled dill throughout. It made the salad seem lighter, and more of an unexpected presentation. I recommend doing the same!

My Mom made this with regular vinegar. I like it as well with the apple cyder vinegar.

I was expecting much from this recipe, but this was boring to me. Perhaps if I added more vinegar and more salt it would have been nicer.
