Ingredients

  • 1 English cucumber, sliced into rounds
  • 1 (12-ounce) can mandarin oranges, drained
  • 1/4 cup fresh mint leaves
  • 1 tablespoon sherry vinegar
  • 2 teaspoons olive oil
  • Salt
  • Ground black pepper

Directions

In a large bowl, combine cucumber, oranges, mint, vinegar, and oil. Toss to combine. Season, to taste, with salt and black pepper.

    I love the combination of cucumbers and oranges. However, after reading over some of the other comments I went ahead and added some very thin slices of red onion and made my own dressing. The dressing is lovely and I use it on lots of salads. It is a combination of olive oil, rice wine vinegar, lime juice, minced garlic, sugar, and tabasco sauce. In this case, I added the fresh mint to the dressing. It was a hit at our church potluck and even my four year old ate it. Next time I will try sliced strawberries instead of the oranges, just because I think it would be just as good.

    I use this recipe over and over in the summer when my garden cucumbers come in. It's light and refreshing. I'll seed the cucumber if necessary, but I've never used an English cucumber. I use red wine vinegar instead of sherry vinegar because it is what I have on hand.

    I used red wine vinegar, and it was pretty good. I took it to a squadron BBQ/picnic, it wasn't a huge hit, I only got one compliment from a LT who is vegetarian and was limited to what she could eat. I really think it was refreshing and minty and yummy. I would suggest cutting the cucumbers into smaller bite sized portions though, I just sliced and cut in half and they were too big.
