    I love the combination of cucumbers and oranges. However, after reading over some of the other comments I went ahead and added some very thin slices of red onion and made my own dressing. The dressing is lovely and I use it on lots of salads. It is a combination of olive oil, rice wine vinegar, lime juice, minced garlic, sugar, and tabasco sauce. In this case, I added the fresh mint to the dressing. It was a hit at our church potluck and even my four year old ate it. Next time I will try sliced strawberries instead of the oranges, just because I think it would be just as good.

    I use this recipe over and over in the summer when my garden cucumbers come in. It's light and refreshing. I'll seed the cucumber if necessary, but I've never used an English cucumber. I use red wine vinegar instead of sherry vinegar because it is what I have on hand.

    I used red wine vinegar, and it was pretty good. I took it to a squadron BBQ/picnic, it wasn't a huge hit, I only got one compliment from a LT who is vegetarian and was limited to what she could eat. I really think it was refreshing and minty and yummy. I would suggest cutting the cucumbers into smaller bite sized portions though, I just sliced and cut in half and they were too big.

    ...but, the recipe as provided needs help. I made this salad for dinner last night, and we sort-of enjoyed, but as others have commented, it needs something. First, I added some sugar, which helped. Also, only added 1/2 the mint to start with -- that was plenty; the full aount called for in the recipe would have overpowered the other ingredients. I will make this salad again, as is it cool and refreshing -- but I will try adding more sugar, maybe some sliced almonds, a bit of mild red or green onion... may also try pomegranate vinegar, as suggested by another reviewer. It's very easy and quick to make, so once I hit on the right ingredient mix, I probably will make it a lot!

    This salad was a disappointment. I can't put my finger on what it was I didn't like, Seperately I love all of the ingrediants but together as a salad it didn't work. It's missing something. Perhaps scallions & avocado would improve it. This is the 3rd Robin Miller recipe I've tried and none of them were a hit at our table. Sorry Robin. I'll keep trying your recipes but so far...blah

    I let my 2 1/2 years old help me fix this for a family picnic and it was nice. She loved to pick out the oranges... I substituted the sherry vinegar with apple cider vinegar and it was fine. It was a pleasant addition to the family picnic!

    Very easy to whip up in a pinch. Cool and refreshing!! Didn't have sherry vinegar, substituted with red wine vingear, and would make it again!! Even my picky husband ate it!! Yumm.

    I couldn't find sherry vinegar so I used Pomegranite vinegar instead. I also add green onion just for a little kick.

    i made this with persian cucumber and add some grape tomatoes with red wine vinegar then sprinkle a little bit of sugar andd it's a winner for my pregnant sister-in-law...it's very refreshing...

    This was yummy. I think next time I will avocado or something else.. maybe shrimp? It seemed to be missing a little substance or something, but the taste was good.
