    Very simple and good flavors. Make sure to blend thoroughly. A little cream would be a nice touch.

    I make squash soup with cream and even bacon sometimes, but this is such a yummy soup you won't even miss all that fat! So easy! I used a large squash, so I needed to add more broth and spice, but very good!

    I really enjoyed the soup, however, I had a much thicker consistency. It may be that my squash was a fairly large one. I couldn't gauge how much squash was relative to the recipe. I just needed to add more broth, so I added to taste. Anyhow, I ate it up! Thanks

    A simple twist on butternut squash soup that is a big hit in our house. Watch that you don't overdo the curry; a little goes a long way. The lime crema is the perfect complement.

    Left out the curry powder, pureed in blender, season generously with salt & pepper. Very nice with fresh sourdough bread.
