Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 2 apples, cored and thinly sliced, such as Granny Smith type apples)
  • 2 (10-ounce) bags shredded red cabbage
  • 1 cup dry red wine
  • 1 cup water
  • 1/2 cup red wine vinegar
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 small potato, peeled and grated

Directions

Heat oil in a large saucepan over medium heat. Add onion and apples and saute 3 to 4 minutes, until tender. Add shredded cabbage, wine, water, vinegar, sugar, cinnamon, salt, and pepper. Bring mixture to a boil, reduce heat, partially cover and simmer 1 hour, stirring occasionally. Add grated potato and simmer, uncovered, 30 minutes, until mixture thickens and potato is tender, stirring frequently.

    I normally don't leave too many reviews unless a recipe REALLY moves me...and this one moved me!! Made this tonight to have with schnitzel and there are really no words to describe how delicious it is! I goofed and used apple cider vinegar instead of red wine vinegar...and I only used a dash of cinnamon (didn't want it to overpower the dish - cinnamon isn't my favorite. And instead of the bags of shredded cabbage, I just used a head of red cabbage. I could eat this with every meal! I'll be making this every week!

    delicious!!! i had to make a few changes but it was still absolutely divine. i didn't have any red wine so doubled the vinegar and added 1/2 cup of white wine. omitted the cinnamon as i am not a big fan of it. Will definitely be adding this to my weekly vegetarian menu.
