Ingredients

  • 2 bulbs fennel, chopped
  • 5 celery stalks, chopped
  • 2 tablespoons chopped fresh basil leaves
  • 2 tablespoons red wine vinegar
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions

Combine all ingredients in a medium bowl and toss to combine.

    it was ok.......really wasn't flavorful at all. its need some sweetness or something.....its was refreshing and crip but it definately needs a sweet sauce or glaze

    I did not care for the Fennel Salad, but again I kinda thought I wouldn't enjoy it because I am not a huge fan of black licorice. A hint of black licorice is the flavor of fennel. However, I thought I really should try a different version of the traditional salad and it is healthy and it truly was different. I think I'd change out the fennel in the future for red cabbage, or possibly add some greens like endive or arugula and less fennel. I am not a huge fan of red wine vinegar and oil, it reminds me of my grandparents type of salad. So I made my own dressing of EVOO, white wine vinegar and a table spoon of honey mustard to make a light more flavorful vinegarette with sea salt and ground pepper.
