Ingredients

  • 4 halibut or sea bass fillets (about 5 ounces each)
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 cup diced roasted red peppers
  • 1/3 cup anchovy or jalapeno stuffed olives, halved crosswise
  • 1/4 cup vermouth or dry white wine
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 cup freshly chopped basil leaves

Directions

Season both sides of fish fillets with salt and black pepper. Heat oil in a large skillet over medium-high heat. Add halibut and cook 2 minutes per side, until golden brown.

In a medium bowl, combine red peppers, olives, vermouth, garlic, and oregano. Add mixture to pan and bring to a simmer. Cook 2 minutes, until fish is fork-tender. Remove from heat, transfer to a serving platter and top with basil.

    I had never prepared halibut before - but it was so simple and the ingredients in the sauce went perfectly with it. My family can't wait to have it again.

    I loved the way this dish looked on Robin's show, tried it out myself last night. What a great combination of flavors! I couldn't find the anchovy stuffed olives, so I bought some pimento stuffed olives. I forgot the oregano, but it really didn't need it. I served it over cous cous, with a vegatable ratatouille (Rachael Ray's on the side. The halibut was light, yet hearty. Sooo Good!

    made this for family, everybody loved it,I did not have olives with anchovies but used plain green olives, also added a zest of lemon and 2 tbs of olive oil as i did not have wine in house,also added a pinch of cayane pepper for zip
    This receipe is a keeper
