Well, my kids (4 and 6 are eating it, so that says a lot! I don't care for the texture of pickled ginger, so I added it to the sauce in the processor. Cooked up some boneless, skinless chicken breasts because that's what I had on hand. Also used 2 small jalapenos, but I probably would prefer only one.

Well I didn't have all the ingredients to begin with, couldn't find pickled ginger or soba noodles at my store so I skipped the ginger all together and used whole wheat linguini, then I pretty much stuck to the recipe and it was a huge hit in our house! No left overs that's for sure. I served it with store bought potstickers, it went together really well. Super easy to make, and tons of flavor. It was awesome!

The only thing I would do differently the next time is to add more jalapeno, or at least leave the seeds in to give it more of a kick.
But this was just enough that my daughter didn't complain about the food being spicy.

This was so quick and easy to make.

This was a Very good dinner , I made it for my family yesterday, I used whole grain spaghetti noodles because my local grocery stores did not carry soba noodles. Also I added some water chestnuts for a little crunch. Very good.

This dish has a great mix of flavors and is very light and yummy. I like a little more spice to my dishes, so I tried it with habanero pepper instead of jalapeno and added some typical stir fry vegetables. Loved it!

This dish was great - the flavors really worked well together. Our regular grocery store doesn't have soba noodles, so I used wheat angel hair. I also added shredded carrots and snap peas for some more veggie goodness. Will definitely make again.

My whole family loved this. So many great flavors. I didn't have any jalapeno on hand so I substituted cayenne and it was still really good.
