    I changed the recipe up a bit to use what I had on hand. I didn't have chicken so I used shrimp. I added sauteed mushrooms, garlic and carrots and some frozen peas and edamame. I did't have pickled ginger so I grated fresh ginger into the sauce. I made the sauce exactly as the recipe says but I used 1/2 the soba. I would definitely double the sauce amount if I used all the noodles.
    I will definitley make this again.

    Do add this to your recipe box. The seond time we doubled the sauce because we like more sauce. An explosion of flavors. We found the ginger in the produce section of the grocery story - it's called "Sushi Ginger." What a wonderful dish this is. If you don't want to rotisserie the chicken, buy one at the store as the chicken is outstanding. And make sure to use soba noodles. We never had had them before - they make this dish. Now all our kids have thisthe recipe too. Thank you Robin Miller

    I read a few reviews first and made some changes. I added fresh ginger to the blender and no water. Next time I will double the sauce and use less noodles. I will also add more chicken. I think it tasted better the next day as left overs but my husband just loved this recipe. It is very light and healthy.

    This was fabulous! I love, too, that I had nearly all the ingredients already in my kitchen - even the pickled ginger left from recent sushi takeout! I will surely be making this again!

    My husband and I both really enjoyed this dish. I don't care for cilantro so I substituted flat leaf parsley and the sauce was still very flavorful. I love dishes that don't take too long to put together and are delicious!

    I have not had a dish so easy and so favorful even in a resaurant. I have made it twice in 1 week and my family loves it. I made it with lo-mein and yudon noodles, both were very good. What is nice is you can always add more spice with extra jalapenos. It has all the favors, sweet, tart, spice. Love, love, love it.

    This is so quick and easy. If you like Asian dishes you will love this. I used Serrano peppers instead of Jalapeno, and Lo Mein instead of Soba and it worked great. The pickled ginger is available everywhere, try the sushi section next to the seafood counter.

    Instead of the rotisserie chicken I grilled chicken thighs that I seasoned with Chinese 5 spice powder which I think really added to the flavor. I didn't have to add any water to the sauce and the jalapeno I used was spicy so it turned out spicy/sweet. What a great combo of flavors. I will definitely bring this to an outdoor Summer concert to share with friends. Very excellent!
