Made this last night for Mom's Valentine Birthday celebration, which we celebrated early.

I had 5 salmon filets, so I used 3 tbs each of fresh lemon juice, dijon mustard and honey. I also used the fresh lemon zest, and the fish marinated for approx. 4 hours. It was flavorful, and very moist and flaky. This was a heavenly way to prepare the salmon.

The blend of the mustard and honey was just right, not too sweet and not overpowered by the mustard. The lemon zest and juice added a nice fresh taste. My husband loved it and I will be fixing this again real soon!

I've made this recipe twice in the last ten days; it's that good. You can taste the honey, mustard and lemon separately (nice and tangy when you put them all together you have one great sauce for the salmon. Would probably go well with other fillet fish, which I will try. THIS IS DEFINITELY A MAKE AGAIN AND AGAIN!!! Thanks Robin.

This recipe is quick and easy, but I thought it was a little lacking in flavor. I expected the glaze to be a little thicker, but it is actually little more than a sauce. If I make it again, I intend to double the sauce and have some available at the table to add a little more flavor to the finished dish.

Salmon is tricky and my wife and I have a big aversion to "fishy" fish, which there is a hint of here. On the positive, the marinade is quite tasty. This recipe is by no means bad, but we've had better.

I really enjoyed this salmon. it was so easy. I mixed it all in a ziplock back and marinated the salmon for 2 hours. I actually baked it for 16 minutes, b/c it wasn't cooked through. it was WONDERFUL. My husband really enjoyed it too.
