Ingredients

  • 1/3 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 1 (11-ounce) can mandarin oranges, drained and liquid reserved
  • 2 cups shredded jicama
  • 2 cups shredded red cabbage
  • Salt and freshly ground black pepper

Directions

In a large bowl, combine mayonnaise, vinegar and 2 tablespoons liquid from mandarin orange can. Add jicama, red cabbage and mandarin oranges. Toss to combine. Season, to taste, with salt and pepper.

    Kind of bland. Much better with more mandarin orange juice, cider vinegar, orange peel and honey.

    Saw comments on "bland" and started recipe. That usually means "too mild" to me. Used 1/3 cup mayo (1/2 of it was fat freeand 2T of the orange juice. Then I used 4 T Trader Joe's Orange Muscat Champagne Vinegar, 1 T honey plus a little salt and pepper. Yum! Picky husband loved it.

    receipe made a beautiful salad but had not taste. This was my first attempt at using Jimaca--it was crucnchy, but no taste to it or the salad!
