Super easy and fairly tasty. Next time I will halve the recipe, dice the beets and serve as a topping for a spinach salad.

I tried this recipe with one substitution: I used a fresh clementine instead of canned mandarin. It tastes really nice. Might an extra good summer salad/side dish if you served it up cold.

I have been looking for something to do with beets because my mother loves them. Beets by themselves can be somewhat boring so this was a delightful combination of flavors, my mother really enjoyed the salad.

My husband loves beets but wasn't very fond of this recipe. The next night I mixed it into our spinach and lettuce salad and that made it a keeper. The juices make an excellent dressing and the beets & mardarin oranges make the salad different. I will make this again.

I was looking for a way to use the can of shoestring beets that I had in my cabinet and happened to see Robin using them in this salad last weekend. It actually turned out better than I thought it would! I made it for myself for lunch - my husband and kids wouldn't touch it with a 10 foot pole! The dijon in the dressing gives the sweet oranges and beets a nice bite!! I let it sit overnight to let the flavors mingle, instead of draining the dressing and serving it right away like Robin did in the show. A little salt and black pepper and I had a great tasting low-fat and calorie salad!!
