My boyfriend and I are big mexican food fans and this recipe was absolutely delicious! It was quick, easy and very tasty. We did exactly what the recipe said but used ground turkey instead of ground chicken and shredded lettuce and sour cream on the top when it was finished. We make it all the time!

Amazing!
Even my very picky boyfriend ate it. Actually devoured half of the pan, literally. It tasted great. I didn't have some of the seasonings on hand so I used Bell Pepper Flakes instead and it still turned out great. Living with the boyfriend, a new puppy, a full time student, AND a part time job, this dinner was quick and easy.

i thought this was 5 star-worthy... but my roommate thought it was just OKAY. i thought it was a tasty and simple dish for a college kid like me! (also very budget-friendly & it makes a lot. i added a can of black beans (rinsed and drained on top of the first layer of tortillas for extra flavor. if you are craving mexican but are sick of tacos, TRY THIS.

Thanks Robin! The Mexican Lasagna is requested now by my kids, my husband and even my neighbor! Just made it for my brother and his son...waiting for their verdict...sure it will be positive! My husband is not a big chicken fan but he really likes this recipe! :

Used flour tortillas and green pepper (instead of chilies since that's what I had on hand, and had bottled hot sauce for the brave ones. Turned out great! Sprayed bottom of pan heavily, with no sticking problem. Would cut the tortillas smaller next time - mine were larger than recipe called for, and the bottom layer was crispy (yum! but a bit tough to cut.

The recipe tasted good but I wasn't wild about the texture of the dish. I would agree with the earlier posts to add some beans to the recipe or rice might be good. A jalapeno would liven it up for families who like a little kick to their meals.

I'm not much of a cook but loved making this recipe. I omitted the sour cream and added a can of black beans. Additionally, I used lean pork and chicken the first time I made it and it was a huge it! Makes great leftovers.

I cooked this ahead for my parents. I used my grocery store's cilantro-lime marinated chicken breasts so the chicken would have some extra flavor (as I hadn't made the chicken in advance. When my parents came, I was able to just pop it in the oven and the flavors were great! Thanks, Robin!

An absolute show stealer. This dish was a huge hit the family. It has definately been put in the rotation of common dishes served on a week night. I couldn't recommend this recipe more. Absolutely delicious!
