We doubled the beans (wouldn't recommend that and added cabage - which made it really yummy. I know that this is a veggie soup - but I am going to add a pound of grd. beef next time I make it.

I loved this for 3 reasons. 1. It was unbelievably easy 2. It is "figure friendly" and 3. It had wonderful flavor. A friend of mine who has been a chef for 5 star hotels loved it and my husband said over and over again, "This is a keeper."

Recipe is so easy to make and completely satisfying on a cold day. I used 4 cups home made stock, a handful of leftover brussel sprouts cut in half from the fridg along with 1 1/2 cubes of Knorr Chicken boullion for a little more depth of flavor. Served with buttered rustic bread and quality parmesan cheese on top...great meal. Enjoy!

It is rainy and a bit chilly today, so I decided to try this recipe for dinner. It was the perfect meal! Even my husband (who is not a fan of veggies ate two big bowls full! My only issue was that I cooked it on high for 4 hours and the carrots/onions weren't mushy enough for my taste. So if you like your veggies a little mushier, I'd do this on the low setting for the full time. I listened to the other reviews about the macaroni. What I decided to do was to keep it separate - spooned the pasta into the bowl and covered it with the soup. I served it with warm, crusty bread. Delicious! Thanks, Robin! :

Awesome flavor and hearty soup! I needed to add a lot more liquid then directed.

this was an excellent soup. One not of caution: I would not add the cooked pasta until about 10 minutes before you expect to serve. I added it as per the directions here, and the pasta soaked up much of the broth, which required me to add another can of broth, right at the end. Also, I would add more broth in general than the recipe calls for. But great flavor from this easy recipe.

Loved the soup, however, the pasta absorbed so much of the broth, I had to add more. Healthy comfort food.

I added extra of all the vegetables plus some mushrooms and garlic and Italian sausage at the end. Tasted delicious, especially with the grated parmesan. But beware of leftovers, the pasta turns to mush when reheated and ruins the soup
